Quick and Refreshing Summer Salads

It’s not all about the lettuce

Author: Kris Lodhi

Quick and refreshing summer salads are the perfect answer to warm days, easy entertaining, and meals that feel light but still full of flavor. And while lettuce has its place, summer’s best salads often come from the season’s most colorful ingredients: sweet corn, juicy peaches, ripe tomatoes, crisp cucumbers, fresh herbs, creamy cheeses, and bright citrus dressings. These no-lettuce salads are simple to make, beautiful to serve, and packed with the kind of fresh flavor that feels effortless and elevated.
