A Summer Favorite

Corn, Peach & Tomato Salad

Ingredients:

  • 2 cups fresh corn, grilled or cooked
  • 2 ripe peaches, diced
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1 avocado, diced
  • 1/3 cup fresh basil or cilantro, chopped
  • 1/2 cup feta cheese, crumbled
  •  

Dressing:

  • 3 tbsp olive oil
  • 2 tbsp lime juice or lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste

Directions:

  1. In a large bowl, combine corn, peaches, tomatoes, cucumber, red onion, avocado, herbs, and feta.
  2. In a small bowl, whisk together olive oil, lime juice, honey, Dijon, salt, and pepper.
  3. Pour the dressing over the salad and toss gently.
  4. Chill for 15 to 20 minutes before serving.
