Corn, Peach & Tomato Salad
Ingredients:
- 2 cups fresh corn, grilled or cooked
- 2 ripe peaches, diced
- 1 pint cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1 avocado, diced
- 1/3 cup fresh basil or cilantro, chopped
- 1/2 cup feta cheese, crumbled
Dressing:
- 3 tbsp olive oil
- 2 tbsp lime juice or lemon juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and black pepper, to taste
Directions:
- In a large bowl, combine corn, peaches, tomatoes, cucumber, red onion, avocado, herbs, and feta.
- In a small bowl, whisk together olive oil, lime juice, honey, Dijon, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Chill for 15 to 20 minutes before serving.
