It’s not all about the lettuce

And while lettuce has its place, summer’s best salads often come from the season’s most colorful ingredients: sweet corn, juicy peaches, ripe tomatoes, crisp cucumbers, fresh herbs, creamy cheeses, and bright citrus dressings. These no-lettuce salads are simple to make, beautiful to serve, and packed with the kind of fresh flavor that feels effortless and elevated.
Watermelon, Feta & Cucumber Salad
Ingredients:
- 4 cups watermelon, cubed
- 1 large cucumber, sliced or cubed
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh mint, chopped
- 2 tbsp olive oil
- 1 tbsp lime juice
- Salt and black pepper
- Optional: balsamic glaze
Directions:
Combine watermelon, cucumber, feta, and mint in a large bowl. Drizzle with olive oil and lime juice. Season lightly with salt and pepper. Finish with balsamic glaze if desired. Serve chilled.
